  • 1 teaspoon dried minced onion
  • 1 small garlic clove, finely minced

  • Chopped cilantro, optional
  • Pinch of smoked paprika, optional

Instructions

  • Prepare the Eggs: Slice the hard-boiled eggs in half lengthwise. Gently pop the yolks into a mixing bowl and place the egg white halves on a serving plate.
  • Soften the Onion: In a small bowl, stir together the lime juice and dried minced onion. Let it sit for 5–10 minutes so the onion softens.
  • Mash the Yolks: Mash the egg yolks with a fork until they are crumbly.
  • Make the Filling: Add the avocado, drained salsa, softened onion with lime juice, garlic, Bald Buck Seasoning, and mayonnaise or sour cream if using. Mash and stir until the filling is mostly smooth. A few small avocado chunks are fine.
  • Add Bacon: Stir in about half of the crumbled bacon. Save the rest for topping.
  • Taste and Adjust: Add a pinch of Bald Buck Seasoning if needed. Add a little more lime juice if the filling tastes too rich.
  • Fill a Piping Bag: Spoon the filling into a piping bag or a resealable plastic bag. Push the filling into one corner, then snip off the corner.
  • Pipe the Filling: Pipe the filling into the egg white halves.
  • Top with Bacon: Sprinkle the remaining bacon over each deviled egg.
