Buck's Bean Burritos

: A quick recipe that delivers big flavors

Ingredients

  • 1 can (16 ounces) refried beans
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1/2 cup sour cream
  • 1/4 cup chopped onion
  • 1/4 cup chopped green pepper
  • 6 flour tortillas (8 inches)
  • 1/4 cup butter, melted

Instructions

  • Prepare the Filling: Preheat oven to 375°F. In a large bowl, combine the first six ingredients.
  • Assemble the Burritos: Spoon about 1/2 cup of the mixture off-center on each tortilla. Fold the sides and ends over filling and roll up.
  • Bake the Burritos: Place in a greased 13x9-in. baking dish. Brush with butter. Bake, uncovered, for 20-25 minutes or until heated through.
