How to Make the Best POTATO SOUP in Your City

Your City: This classic potato soup is rich, creamy, and deeply comforting — thickened naturally with russet potatoes and finished with bold Bald Buck Seasoning for savory depth.
What Most People Don’t Know About Making POTATO SOUP
- No separate skillet needed: Making the roux directly in the soup pot saves time and dishes while giving you perfect thickness.
- Potatoes do the thickening: Russets release starch as they cook, creating a naturally creamy soup without heavy thickeners.
- Choose the right herbs: Parsley or chives brighten the soup without overpowering its classic, savory flavor.
Ingredients
- ½ lb bacon (6–8 slices), chopped
- 2 celery stalks, diced
- 1 medium yellow onion, chopped
- 3 garlic cloves, minced
- 8 medium russet potatoes, peeled and cubed
- ¼ cup all-purpose flour
- 6–8 cups chicken stock or broth (enough to cover potatoes)
- 1 cup heavy cream
- 1 tsp dried thyme or 1 Tbsp fresh parsley or chives
- Bald Buck Seasoning, to taste
- Optional toppings: shredded cheddar, extra bacon, green onions, sour cream
Instructions
- Cook the bacon: In a large soup pot over medium heat, cook chopped bacon until crispy, about 8–10 minutes. Remove with a slotted spoon and set aside. Pour off excess grease, leaving about 2 tablespoons in the pot.
- Sauté the vegetables: Add celery and onion to the pot. Cook for about 5 minutes until softened. Stir in garlic and cook 1 minute more until fragrant.
- Make the roux: Sprinkle flour over the vegetables. Stir and cook for 1–2 minutes to remove the raw flour taste.
- Add potatoes and stock: Stir in cubed potatoes. Pour in enough chicken stock to just cover them. Bring to a boil, then reduce to a simmer. Cover and cook 15–20 minutes until potatoes are very tender.
- Mash or blend (optional): For a creamier texture, mash some potatoes with a spoon or use an immersion blender to partially blend the soup.
- Add cream and seasoning: Stir in heavy cream and herbs. Warm gently for 3–5 minutes over low heat. Taste and season with Bald Buck Seasoning as needed.
- Serve: Ladle into bowls and top with crispy bacon and your favorite toppings.
