Ingredients

  • ½ lb bacon (6–8 slices), chopped
  • 2 celery stalks, diced
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 8 medium russet potatoes, peeled and cubed
  • ¼ cup all-purpose flour
  • 6–8 cups chicken stock or broth (enough to cover potatoes)
  • 1 cup heavy cream
  • 1 tsp dried thyme or 1 Tbsp fresh parsley or chives

  • Optional toppings: shredded cheddar, extra bacon, green onions, sour cream

Instructions

  • Cook the bacon: In a large soup pot over medium heat, cook chopped bacon until crispy, about 8–10 minutes. Remove with a slotted spoon and set aside. Pour off excess grease, leaving about 2 tablespoons in the pot.
  • Sauté the vegetables: Add celery and onion to the pot. Cook for about 5 minutes until softened. Stir in garlic and cook 1 minute more until fragrant.
  • Make the roux: Sprinkle flour over the vegetables. Stir and cook for 1–2 minutes to remove the raw flour taste.
  • Add potatoes and stock: Stir in cubed potatoes. Pour in enough chicken stock to just cover them. Bring to a boil, then reduce to a simmer. Cover and cook 15–20 minutes until potatoes are very tender.
