  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup peas and carrots (thawed and dried)
  • 1/2 cup chopped green onions
  • Bald Buck Seasoning and pepper to taste

Instructions

  • Prep the Rice: Break up any clumps with your hands. If the rice feels damp, let it sit out for 10–15 minutes to dry.
  • Cook the Pork: Toss pork with 1 tablespoon soy sauce, Bald Buck Seasoning, and pepper. Heat 1 tablespoon oil in a large pan or wok over high heat (or medium-high). Cook for 3–4 minutes until browned with a light crust. Remove and set aside.
  • Scramble the Eggs (Don’t Skip the Oil): Add a small drizzle of oil if the pan looks dry. Add eggs and scramble quickly into soft pieces. Remove and set aside with the pork.
  • Build the Flavor Base: Add another tablespoon of oil. Cook onion for 1–2 minutes until slightly soft. Add garlic and cook for 30 seconds. Add peas and carrots and stir-fry for 1–2 minutes.
