Buck's Roast Citrus Chicken

:  Seriously, you've gotta try this.


  • 6 lb Whole Chicken
  • 2 Cinnamon Sticks
  • 1 Piece Fresh Ginger
  • 4 tbsp Butter
  • 1 Orange, Sliced
  • 1 Red Onion, Sliced
  • 1 Onion, Sliced
  • 5 Cloves Garlic
  • 3 Sprigs Thyme
  • Bald Buck Seasoning, to taste
  • Pepper, to taste
  • Zest of 1 Orange


  • Preheat Grill: Set the temperature  to 375℉ and preheat with the lid closed for 15 minutes.
  • Prepare Chicken: Rinse the chicken under cold water and place it on a sheet pan.
  • Make Spice Butter: Coarsely crush the cinnamon sticks and ginger. Mix them with half the butter. Spread this mixture under the chicken's skin.
  • Stuff Chicken: Slice one orange and stuff it into the chicken cavity along with the red onion, white onion, garlic cloves, and thyme.
  • Season Chicken: Rub the outside of the chicken with the remaining butter. Season with Bald Buck Seasoning, pepper, and orange zest.
  • Roast Chicken: Place the chicken directly on the grill grate. Roast at 375℉ for 1 to 1-1/2 hours, or until the internal temperature reaches 160℉.
  • Rest and Serve: Allow the chicken to rest for 15 minutes before carving.
