Buck's Thai-Style Cobb Salad

Ingredients:

  • 4 cups torn romaine
  • 1 cup coleslaw mix
  • 1 cup cubed cooked chicken breast
  • 1 medium ripe avocado, peeled and cubed
  • 1/2 cup shredded red cabbage
  • 1/2 cup julienned carrot
  • 1/2 cup chopped cucumber
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped peanuts
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons lime juice
  • 2 tablespoons rice vinegar
  • 2 tablespoons canola oil
  • 1 tablespoon reduced-sodium soy sauce
  • 2 teaspoons sugar
  • 1 garlic clove, minced
  • 1/4 teaspoon crushed red pepper flakes

Instructions

  • Prepare the Salad: In a large bowl, combine the first 8 ingredients.
  • Make the Dressing: In a small bowl, whisk the lime juice, vinegar, oil, soy sauce, sugar, garlic, and red pepper flakes until blended. Pour over salad; toss to coat. Sprinkle with peanuts and mint
