- 2 tbsp olive oil
- 1 tbsp unsalted butter
- 1/2 cup low-sodium chicken broth
- 1/2 cup heavy cream
- 1/4 cup sour cream

- 1/4 tsp garlic powder
- 1/4 tsp red pepper flakes (optional but tasty)
- 5 oz baby spinach (about 5 packed cups)
- 2 tbsp grated Parmesan (optional, but recommended)

Instructions
- Prep the Chicken: Pat dry and season both sides with Bald Buck Seasoning. Lightly coat in flour and shake off excess.
- Cook the Chicken: Heat olive oil in a large skillet over medium heat. Sear chicken 3–4 minutes per side until golden and cooked through (165°F). Transfer to a plate and cover loosely.
- Mix the Sauce: In a bowl, whisk together chicken broth, heavy cream, sour cream, Dijon, garlic powder, a pinch of red pepper flakes, and a small pinch of Bald Buck Seasoning.
- Sauté the Onions: In the same skillet, melt butter. Add sliced onion; cook over medium-low ~5 minutes until soft and golden. Stir in garlic (and more flakes if you like); cook 30 seconds.
