  • 1 (15 oz) can whole kernel corn, drained
  • 1 (14.75 oz) can creamed corn
  • 1 (8.5 oz) box Jiffy-style cornbread mix
  • 1 cup sour cream (full fat)
  • ½ cup (1 stick) unsalted butter, melted
  • 2 large eggs, beaten
  • 1 cup shredded sharp Cheddar cheese, divided (¾ cup in the mix, ¼ cup for topping)
  • ½ small yellow onion, finely diced and sautéed
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon Bald Buck Seasoning (or to taste)
  • ¼ teaspoon black pepper

Instructions

  • Preheat & Prep: Preheat oven to 350°F (175°C). Grease a 9x9-inch baking dish.
  • Blend for Creaminess: In a blender or food processor, blend half of the drained whole corn with all the creamed corn until mostly smooth.
  • Mix the Batter: In a large bowl, combine the blended corn mixture, remaining whole corn, cornbread mix, sour cream, melted butter, eggs, ¾ cup of the cheese, and the sautéed onion. Add garlic powder, smoked paprika, Bald Buck Seasoning , and black pepper. Stir until fully mixed.
  • Top with Cheese: Pour mixture into the prepared baking dish and smooth the top. Sprinkle the remaining ¼ cup cheese evenly over the top.
  • Bake: Bake for 45–50 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean.
  • Rest & Serve: Let it rest for 15 minutes before serving. This helps it firm up so you get clean slices.
