How to Make the Best Creamy Corn Casserole in Your City
Your City: This creamy corn casserole bakes up soft in the middle with a golden cheesy top — a classic comfort side that shows up strong for holidays, potlucks, and weeknight dinners.
What Most People Don’t Know About Making Corn Casserole
- Blending Adds Creaminess Without Losing Texture: Don’t just dump in the corn — blend half the whole kernels with the creamed corn to make a smooth base, then keep the rest whole for that sweet pop.
- Cheese on Top = Golden, Gooey Crust: Mixing all the cheese into the batter won’t give you that browned, bubbly top. Save a little for the finish.
- Let It Rest So It Sets: Rest time isn’t optional — it helps the eggs and cornmeal firm up. Slice it too early and it’ll fall apart.
Ingredients
- 1 (15 oz) can whole kernel corn, drained
- 1 (14.75 oz) can creamed corn
- 1 (8.5 oz) box Jiffy-style cornbread mix
- 1 cup sour cream (full fat)
- ½ cup (1 stick) unsalted butter, melted
- 2 large eggs, beaten
- 1 cup shredded sharp Cheddar cheese, divided (¾ cup in the mix, ¼ cup for topping)
- ½ small yellow onion, finely diced and sautéed
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon Bald Buck Seasoning (or to taste)
- ¼ teaspoon black pepper
Instructions
- Preheat & Prep: Preheat oven to 350°F (175°C). Grease a 9x9-inch baking dish.
- Blend for Creaminess: In a blender or food processor, blend half of the drained whole corn with all the creamed corn until mostly smooth.
- Mix the Batter: In a large bowl, combine the blended corn mixture, remaining whole corn, cornbread mix, sour cream, melted butter, eggs, ¾ cup of the cheese, and the sautéed onion. Add garlic powder, smoked paprika, Bald Buck Seasoning , and black pepper. Stir until fully mixed.
- Top with Cheese: Pour mixture into the prepared baking dish and smooth the top. Sprinkle the remaining ¼ cup cheese evenly over the top.
- Bake: Bake for 45–50 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean.
- Rest & Serve: Let it rest for 15 minutes before serving. This helps it firm up so you get clean slices.
