Buck's Sausage-Tomato Coconut Curry

Ingredients

  • 1 pound Italian sausage links, cut into 1/2-inch slices
  • 1 medium onion, finely chopped
  • 1 tablespoon canola oil
  • 2 garlic cloves, minced
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 1 can (13.66 ounces) coconut milk
  • 1 tablespoon tomato paste
  • 1 tablespoon curry powder
  • 1/2 teaspoon Bald Buck Seasoning
  • 1/4 teaspoon pepper
  • Hot cooked rice
  • Minced fresh cilantro

Instructions

  • Cook the Sausage: In a large skillet, cook sausage and onion in oil over medium heat until sausage is no longer pink, breaking it into crumbles; drain.
  • Add Garlic: Add garlic; cook 1 minute longer.
  • Combine Ingredients: Stir in tomatoes, coconut milk, tomato paste, curry powder, Bald Buck Seasoning, and pepper.
  • Simmer: Bring to a boil. Reduce heat; simmer, uncovered, for 10-15 minutes or until thickened, stirring occasionally.
  • Serve: Serve with rice. Sprinkle with cilantro.
