Ingredients:
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 2 tablespoons honey
- 2 tablespoons reduced-sodium soy sauce
- 2 garlic cloves, minced
- 1/4 teaspoon ground ginger
- 1/4 teaspoon crushed red pepper flakes
- 4 boneless skinless chicken breast halves (6 ounces each)
- Lime wedges (optional)
Instructions:
- Marinate the Chicken: In a small bowl, whisk the first seven ingredients until blended. Pour 1/2 cup marinade into a large resealable plastic bag. Add chicken; seal bag and turn to coat. Refrigerate for 2 hours. Cover and refrigerate the remaining marinade.
- Grill the Chicken: Drain chicken, discarding marinade in bag. Grill chicken, covered, over medium heat for 5-7 minutes on each side or until a thermometer reads 165°F. Baste occasionally with reserved marinade during the last 4 minutes of cooking. If desired, serve with lime wedges.
