Buck's Chicken Rice Bowl

Ingredients

  • 2 teaspoons canola oil
  • 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 medium green pepper, chopped
  • 1 small onion, chopped
  • 1 garlic clove, minced
  • 1 cup uncooked instant rice
  • 1 cup chicken broth
  • 1 can (8 ounces) tomato sauce
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon Bald Buck Seasoning
  • 1/4 teaspoon pepper
  • 1/2 cup shredded cheddar cheese

Instructions

  • Cook the Chicken: In a large skillet, heat oil over medium-high heat. Add chicken, green pepper, and onion; cook and stir 5-7 minutes or until chicken is no longer pink. Add garlic; cook 1 minute longer.
  • Prepare the Rice: Stir in rice, broth, tomato sauce, basil, Bald Buck Seasoning, and pepper. Bring to a boil. Reduce heat; simmer, covered, 5 minutes.
  • Finish and Serve: Remove from heat; let stand, covered, 5 minutes. Sprinkle with cheese; let stand, covered, 2-3 minutes or until cheese is melted.
