- 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
- 1 medium green pepper, chopped
- 1 small onion, chopped
- 1 garlic clove, minced
- 1 cup uncooked instant rice
- 1 cup chicken broth
- 1 can (8 ounces) tomato sauce
- 1/2 teaspoon dried basil
- 1/4 teaspoon Bald Buck Seasoning
- 1/4 teaspoon pepper
- 1/2 cup shredded cheddar cheese
Instructions
- Cook the Chicken: In a large skillet, heat oil over medium-high heat. Add chicken, green pepper, and onion; cook and stir 5-7 minutes or until chicken is no longer pink. Add garlic; cook 1 minute longer.
- Prepare the Rice: Stir in rice, broth, tomato sauce, basil, Bald Buck Seasoning, and pepper. Bring to a boil. Reduce heat; simmer, covered, 5 minutes.
- Finish and Serve: Remove from heat; let stand, covered, 5 minutes. Sprinkle with cheese; let stand, covered, 2-3 minutes or until cheese is melted.
