- 1 pound ground beef
- 1 medium onion, chopped
- 1 envelope taco seasoning
- 2/3 cup water
- 1 can (15 ounces) refried beans
- 4 flour tortillas (10 inches)
- 1/4 cup canola oil
- 2 cups shredded cheddar cheese
- 1 cup salsa
- 1/2 cup chopped fresh cilantro
- Optional toppings: shredded lettuce, chopped tomatoes, sliced ripe olives, sour cream, and guacamole
Instructions
- Cook the Beef: In a large skillet, cook beef and onion over medium heat until beef is no longer pink; drain. Stir in taco seasoning and water; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Stir in refried beans; heat through.
- Prepare Tortillas: In another skillet, heat oil over medium heat. Add tortillas, one at a time; cook until lightly browned, 1-2 minutes on each side. Drain on paper towels.
