Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 envelope taco seasoning
  • 2/3 cup water
  • 1 can (15 ounces) refried beans
  • 4 flour tortillas (10 inches)
  • 1/4 cup canola oil
  • 2 cups shredded cheddar cheese
  • 1 cup salsa
  • 1/2 cup chopped fresh cilantro
  • Optional toppings: shredded lettuce, chopped tomatoes, sliced ripe olives, sour cream, and guacamole

Instructions

  • Cook the Beef: In a large skillet, cook beef and onion over medium heat until beef is no longer pink; drain. Stir in taco seasoning and water; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Stir in refried beans; heat through.
  • Prepare Tortillas: In another skillet, heat oil over medium heat. Add tortillas, one at a time; cook until lightly browned, 1-2 minutes on each side. Drain on paper towels.
  • Assemble Pizzas: Place tortillas on ungreased baking sheets. Spread beef mixture over tortillas; sprinkle with cheese.
  • Bake: Bake at 400°F until cheese is melted, 8-10 minutes. Top with salsa and cilantro. If desired, serve with lettuce, tomatoes, olives, sour cream, and guacamole.
